Dates Candy

Ingredients

  • 1 cup Dates deseeded
  • 1/4 cup sugar or honey (if the dates aren't that sweet)
  • 1/4 cup water optional
  • 1/2 cups milk or dairy free alternative
  • 1-2 pods cardamon ground to powder
  • 7-10 whole Almonds sliced/ chopped
  • 7-10 whole cashew nuts sliced/ chopped
  • 1 tbsp Ghee (butter)

Instructions

  • Deseed the dates and slice them. Keep them in a medium bowl.
  • Add warm milk and let the dates soak for 30-45 minutes before working with them.
  • Based on the sweetness of dates, make the sugar syrup. Heat water in a small pan, bring it to a boil. Now add sugar (as required for sweetness) and dissolve it to get a syrup.
  • Instead of sugar, honey can also be used.
  • Slice/ chop almonds and cashew nuts. Pistachios can also be used. Ground cardamom to get a powder.
  • In a blender/ food processor, add the soaked dates and grind to get a smooth paste. Keep adding the left over milk if required during grinding. The remaining keep aside.
  • In a medium non stick pan heat 1/2 tbsp ghee (butter) and add the dates milk paste. Stir and cook the mixture on a medium flame. Add the leftover milk if any.
  • Next add the sugar syrup/ honey and continue to cook and stir.
  • Cook until the mixture becomes a lump and leaves the side of the pan.
  • Now add the remaining 1/2 tbsp of ghee, cardamon and nuts and mix well. Cook for another 3-4 minutes.
  • Remove from heat and let the mixture cool.
  • Once cooled, roll the mixture into small candy balls (or any desired shape).
  • Refrigerate overnight or for 4 hours. This will help firm up the candy.
  • Keep the candy balls refrigerated at all times (or store in a cool dry place).

Notes

  1. To roll out balls, work with greased palms.
