Ingredients

Zucchini
shredded/ grated

Corn kernels
fresh or frozen

Spring Onions
or Green Onions (chopped)

Fresh Ginger
minced or Ginger paste

tsp
Garlic, minced
minced or Garlic paste
1 1/4
cup
Chickpeas flour
or 'Besan'

Cumin

coriander
1/2 - 1

Red chilli powder
or Paprika

Turmeric

Black pepper
Salt to taste

for cooking the fritters
Instructions
In a large bowl, combine all the ingredients except oil.
Stir together until well combined. Let it rest for 5 minutes. This will help the moisture from zucchini to form a thick batter.
Heat 3 tbsp oil in a non stick pan/ skillet. Scoop out about 1/4 cup of the batter at a time into the pan.
Cook for around 5 minutes on one side, until golden brown and flip. Repeat the same on the other side as well.
Remove and drain excess oil.
Serve warm with a mint chutney/ tomato ketchup/ salsa/ beans side. Enjoy!
