Crispy Rajasthani Bhindi (Gram flour coated Okra)

Lightly sautéed Okra is gently tossed with roasted gram flour and other spices to create a dish that goes well as a curry/ side.

Ingredients

  • 1/2 lbs Bhindi (or Okra) or 250 grams
  • 3-4 tbsp Besan or gram flour
  • 1 tsp Amchoor or dried mango powder
  • 1 tsp coriander
  • 1/2 tsp garam masala
  • 1/2 tsp Red chilli powder
  • 1/4 tsp Turmeric
  • Salt to taste
  • 3-4 tbsp cooking oil

Instructions

  • Rinse and pat dry Okra. Cut the crown and tip.
  • Make 2-3 slits without completely slicing. Now cut them into 1/2 inch pieces.
  • Heat oil in a medium non stick pan and sauté okra pieces until crisp and slight brown.
  • Remove and drain excess oil. Keep them aside.
  • In the same pan, heat 1/2 tbsp oil and roast besan until it's raw fragrance disappears.
  • Now add the sautéed okra and gently toss. Next add in all the spices and salt and stir gently so that the mixture coats okra well.
  • Transfer to a serving bowl and enjoy as a side with drinks or with hot rotis (Indian flatbread).
