Equipment

  • Food Processor with a grating blade
  • Grater
  • Measuring Cup
  • Pan

Ingredients

  • 4 cups Grated Beetroot
  • 4 cups Milk Whole or 2% or fat free
  • 1/2 cup Sugar Adjust it to your taste. I used raw sugar but you can use refined sugar or sweetner of your choice
  • 4 tbsp 'Ghee' clarified butter. You can use butter or oil of your choice
  • 1/2 tsp cardamon seeds powdered
  • 2 tbsp cashews unsalted roughly ground or slivered
  • 2 tbsp almonds unsalted roughly ground or slivered
  • 2 tbsp Pistachios unsalted roughly ground or slivered
  • 2 tbsp raisins

Instructions

  • Scrub and wash beetroots with water to remove any dirt off their skin.
  • Grate them. I used a food processor with grating blade. It's much faster and less mess. But you can always use a regular hand grater as well.
  • In a thick bottomed pan or pot add and mix grated beetroot and milk.
  • On a medium flame bring this mixture to a boil and let it simmer.
  • Beets will cook in milk and the milk will start to reduce and evaporate.
  • Keep stirring in between.
  • When milk is 80% reduced, add sugar and 'ghee' and combine it well.
  • Continue to cook until the milk has mostly evapourated. Keep stirring in between.
  • Switch off the heat and add cardamom powder, nuts and raisins.
  • Serve hot or refrigerate and serve cold. It tastes great either ways! Enjoy.
