Pre-heat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
Peel, core and grate apple and keep it aside. Beat the eggs in a separate bowl and keep aside.
Sift together flour and baking powder in a medium bowl. Add ginger and mix gently. Keep it aside.
In a large mixing bowl, cream the butter with a mixer (on medium speed) until smooth.
Next add maple syrup while mixing the butter in a slow stream. Mix it for 5 minutes.
Now slowly add in the eggs to the mixture (while mixing). You can increase the speed of the mixer to medium high. Beat until the mixture turns smooth and fluffy.
Next, the flour mix (from step 3) needs to be added. Reduce the mixer speed to low and slowly beat in the flour. Once the flour in well combined in the batter, add in the milk and beat until it's smooth.
Add in grated apple and walnuts and gently stir it into the batter.
Grease an 8 inch cake pan with butter and pour in the above mixture.
Bake until golden and a skewer/ toothpick inserted comes out clean. This should be around 45-50 minutes.
Cool for 15 minutes before removing the cake from pan.
If desired, garnish with apple chips and enjoy!
