How often does it happen that you are approaching meal time, but want to have something light and fresh? The answer would be Mixed Pear Salad.
Pear is commonly available in grocery stores and is found year around. This fruit is high in fiber, vitamins and other essential micronutrients. It easily blends with other fruits, vegetables and herbs.
Sharing my version of a quick and simple Mixed Pear Salad.
Ingredients:
- 1 Pear chopped
- 2 Roma tomatoes, de-seeded and chopped
- 1 medium sized carrot
- 1/2 cup American corn kernels
- 1 tsp crushed dried Basil (fresh Basil leaves can be used as well)
- 1 tsp crushed Oregano
- 1 tbsp dried/ fresh chopped Parsley (or Cilantro)
- 1/2 tsp Cayenne pepper powder
- Salt to taste
Directions:
- In a medium sized mixing bowl, add all the ingredients and gently toss.
- Enjoy as salad or side!
