Zucchini Corn Fritters

Zucchini Corn Fritters is a simple, healthy & delicious summery recipe that is so easy to make and serve.

Good for entertaining…pair it with salsa and beans to make it a hearty appetizer!

This recipe also happens to be Vegan & Gluten-free ?

What goes in it?

As the name suggests, it has Zucchini & Corn. In addition, it also has Spring Onions (or Green Onions – based on availability), fresh Ginger and fresh Garlic, Chickpeas flour (or ‘Besan’, as it’s called in Hindi) and basic Indian spices.

It’s best enjoyed with summer fresh produce, like, Zucchini, Corn, Spring onions & Ginger. If you are trying to make it later in the year, replace Spring Onions with Green Onions & fresh corn with Frozen Corn.

Can I Add other Veggies?

Of course you can! Carrots (shredded), Green peas & Fava beans are a few other veggies that I can think of ?

It’s important to keep the recipe simple and not ‘over-load’ it with veggies. Also keep in mind, the batter shouldn’t be too runny (some veggies can increase the moisture content of the batter & make it runny).

Keep it Seasonal & Local

It’s so important to eat Fruits & Vegetables that are in season and grown locally.

Eating what’s in season provides best tasting & healthiest fruits & vegetables. Produce that’s at its peak of supply, would cost you less versus when it’s out of season!

It’s also a healthy practice to buy locally grown produce. This will ensure that you get food that is seasonal, fresh and support local farms/ businesses. Shop at nearby farmers markets, support a local farm or subscribe for a fresh food delivery service from such farms.

Remember, great dishes comes from simple ingredients!

Coming back to my recipe, shredded Zucchini, fresh Corn, chopped Spring onions (or Green onions), fresh Ginger, fresh Garlic, Chickpeas flour, basic Indian Spices and seasoning are mixed to form a batter. The moisture from Zucchini is enough for the mixture. This batter is then scooped out into batches on a warm non stick pan/ skillet and cooked.

Serve with Tomato ketchup or Mint Chutney or Salsa & beans. Enjoy!

Ingredients

  • 4 medium sized Zucchini shredded/ grated
  • 1 1/2 cups Corn kernels fresh or frozen
  • 1 cup Spring Onions or Green Onions (chopped)
  • 1 tsp Fresh Ginger minced or Ginger paste
  • 1 tsp Garlic, minced minced or Garlic paste
  • 1 1/4 cup Chickpeas flour or ‘Besan’
  • 1 tsp Cumin
  • 1 tsp coriander
  • 1/2 – 1 tsp Red chilli powder or Paprika
  • 1/4 tsp Turmeric
  • 1/4 tsp Black pepper
  • Salt to taste
  • cooking oil for cooking the fritters

Instructions

  • In a large bowl, combine all the ingredients except oil.
  • Stir together until well combined. Let it rest for 5 minutes. This will help the moisture from zucchini to form a thick batter.
  • Heat 3 tbsp oil in a non stick pan/ skillet. Scoop out about 1/4 cup of the batter at a time into the pan.
  • Cook for around 5 minutes on one side, until golden brown and flip. Repeat the same on the other side as well.
  • Remove and drain excess oil.
  • Serve warm with a mint chutney/ tomato ketchup/ salsa/ beans side. Enjoy!
