Baked veggie toast is a healthy and yummy way to begin your day! It’s worth giving a try 🙂
Ingredients:
- 2-4 Whole wheat bread slices
- 1 tbsp butter
- 1 tbsp All purpose flour
- 1 tbsp chopped Garlic
- 200 ml Milk
- 1/2 cup each of boiled American corn kernels, broccoli, chopped carrots, chopped beans, mushrooms
- 1/2 tsp Pepper
- 1/2 tsp Red chilli flakes
- 1/2 tsp crushed dried Basil
- 1/2 tsp dried crushed Oregano
- 1/2 cup Parmesan cheese
- 1 tbsp Butter
- Salt to taste

Veggies in white sauce:
- Heat a non-stick sauce pan and melt butter. Add all purpose flour and garlic. Cook for a minute.
- Then add milk and cook for 2 minutes.
- Next add all the vegetables and cook for 5 minutes.
- Now add all the herbs, spices and salt.
- Remove the mixture from heat.
Assembling the toast:
- Preheat oven to 400 F (or 200 C).
- Take a bread slice and spread butter. Then spread Marinara sauce.
- Now layer the veggie mixture and sprinkle parmesan cheese.
- Repeat the same steps for the remaining slices.
- Place the slices on an oven proof sheet/ tray and bake for 15-20 minutes.
- Baked Veggie toast is now ready….Enjoy!
